The weekend seems like a blur of activity, and looking back I am wondering what the heck I got done! Lots of “stuff” not much accomplished.
One thing is for certain, dark and cold Monday mornings are not the best way to start a week and, this morning seemed extra dark and oh so chilly! It would have been so easy to stay in bed.
But, I somehow have an extra-long list today so, sadly, staying in bed was not an option.
I pondered the preservation of diced tomatoes last week, but Bonny’s kind reminder of the uncertainty of canning tomatoes was enough to dispel that idea. So today, I am giving Vicki’s Roasted Tomato Sauce a whirl. I am looking forward to the smell of those tomatoes roasting away and as an added bonus, the oven will heat the house up a bit!
Oh, and those pickled tomatoes? Divine! The list of things I want to put them on has grown exponentially: avocado toast, chicken salad sandwiches, tuna melts, poached eggs…I mean these little jewels are incredible!
Then, I am sitting down to cut out my first AC shirt. I am going to keep it simple for my first try with an A-Line top (no flowers, this time…) Oh, and bonus points are awarded for figuring out how to print the pattern on a Monday morning! (Pro-tip… select “poster” from printing options!)

I predict your dark and chilly Monday is going to improve dramatically once you have Vicki’s tomato sauce roasting in your oven. The beauty, delicious scent, and warmth from the oven are wonderful! And now I’m planning to enjoy some of my pickled tomatoes on a tuna melt; thanks for a great idea!
Very dark outside here too but I have managed to get in my journaling and mat time before I leave for work. I have been looking for a simple top and just decided yesterday that I need to make one since what I want doesn’t seem to exist in the stores. I need to dig through my patterns because I think I have one that will work. Happy Monday.
I too had a hard time getting out of bed this morning. I suspect going to bed a little late last night and then being woken up by my husband’s snoring throughout the night did not help either.
I’m glad to hear the pickled tomatoes were a success! Seeing as my garden will likely not cooperate, I may just have to buy some from the store and give it a go.
The tomato sauce will brighten your day. I put the sauce in quart freezer bags so we have it to enjoy all winter. Not only sauces, but it works well in soups and as a lovely tomato soup by itself. I’ve made about 20 quarts this summer. Hope the rest of your list goes by smoothly, too!

Oh I hated that alarm going off in my 5 a.m. get to work by 7 days. The darker it was, the heavier my bones felt. I only get up early for the barn now. Ha! Volunteering gets me out of bed. Whod a thunk it?
Oooh, I hope you love that tomato sauce!! It’s fun to play around with the add-ins. 😉 Ugh. My alarm goes off at around 5:30 on average… it’s so dark now!! Boo.
I have made Vicki’s roasted tomato sauce several years in a row now. It is delicious and freezes really well. And it is a great way to use up all sorts of veggies from the garden. I used tomatoes, peppers, onions, zucchini, yellow squash – yum! It is on my list to make the weekend of the 23rd – after my audit s done.
